Moros y cristianos

Moros y cristianos

Pre-cook black beans un rato...
  • 3/4 - 1 kilo black beans
  • water
  • cumin
  • bay leaves
  • epazote (cooking beans with cumin, bay leaves and epazote helps reduce flatulence-causing agents in beans)
Saute 10 minutes:
  • 1-2 green peppers
  • 1-2 medium onions
Add and saute 5 more minutes:
  • 2-3 tomates (optional)
  • 3 cloves garlic (unless your a garlicphile like me, then just use as much as your heart desires)
In a pot put sauteed mixture, pre-cooked beans,
  • 1 lb ham hocks (optional)
  • 2 teaspoons paprika
  • 2 teaspoons oregano
  • tomate sauce
  • 1 T vinager
  • boullion cube
  • salt and pepper to taste
  • 1/2 t chili powder
  • more water, if necessary
Cook until beans are soft. Bon apetit. ;)

Foods I would like to learn how to make

  • whole/multigrain bread, English muffins, crackers, cookies- kind of like energy bars
  • a really tasty garlic sauce, to make my own version of eggs benedict
  • gnocchi
  • healthy but tasty pizza
